Note: Do not mix with highly alkaline solutions like sanitizers as it may release potentially harmful gases. Citric acid can decompose under the influence of malolactic bacteria, forming diacetyl and causing an increase in volatile acidity (vinegar aroma). Using it in unfermented grape wines is not recommended.
